Do you mean the rake? The hosting charity keeps 10% of every cash game hand, capped at $5. For example, if there is $30 in the pot at the end of the hand, the dealer will take $3 out of the pot for the rake (what the charity makes from the hand for running the game), and the winner of the hand would receive the rest of the pot $27. If the pot was $137, the dealer would take $5 (the maximum rake allowed), and the winner of the hand would receive $132. There could also be a $1 promo taken from the hand, in addition to the rake, from any pot over $20. The promo is what players receive from the charities for playing the game. Typically given back to the players in the form of freerolls, giveaways, free seats, and bad beat jackpots. The promo would look like this: as soon as the pot reaches $20 (post-flop), the dealer would take $1 for the promo. Then, at the end of the hand, the dealer would calculate 10% of the pot up to a $5 maximum.

10% up to #5 of the cash game pot. For tournaments, the rake/prizepool breakdown is in the description. For example, the $20 Early Bird is (15+$5). $15 to the prize pool and $5 rake to the hosting charity.
